Healthy Snack: Kale Chips

  1. Preheat oven to 400°Fkale chips
  2. Line cookie sheet(s) with non-stick tin foil.
  3. Lightly spread olive oil (or coconut oil) evenly across tin foil.
  4. Rinse and dry the kale, then remove the stems and tough center ribs.
  5. Break kale into medium pieces.
  6. Put kale onto cookie sheet (try to avoid excessive overlapping). 1 bushel of kale is roughly 1 cookie sheet in my experience. I bake two cookie sheets at a time.
  7. Spread olive oil (or coconut oil)  over top of kale and add salt and pepper.
  8. Place cookie sheet(s) in oven and cook for 15-20 minutes, or until crisp.
  9. Remove kale from cookie sheets and enjoy!BC
